Porter or Ale
Beef or vegetable stock
Brown beef and sliced onion in butter (or oil) in a frying pan, and transfer to slow cooker.
Add swede, carrot and leek (peeled and chopped) and mushrooms (sliced).
Pour in a bottle of porter such as Guinness or a dark brown ale.
Pour in enough stock to cover ingredients and add a large glug of Hendersons relish to taste.
Stir to mix ingredients.
Cook for 1 hour on high and 4 hours on low, or 6 hours on low.
Add peas 10 mins. before end of cooking time.
Alternatives to recipe;
Add a drained tin of tomatoes at beggining of cooking time.
Substitute a large glass of red wine for the porter/ale.
Add herbs, such as parsley or a bay leaf.
Serve with a giant Yorkshire pudding and mashed potatoes. (Or add chunks of peeled potatoes to slow cooker with other vegetables)
Serve with dumplings (add 1 hour before end of cooking time)
Serve with or without the dumplings in a bowl with large chunks of crusty bread on the side.
